Tory Fox's UNDERSWAP is an AU that follows the idea of "What if Asriel died on the surface, and Chara escaped back to Mt. Ebott?"
In UNDERSWAP, there is a monster rebellion bubbling up due to the poor leadership under QUEEN TORIEL, causing the underground's general vibe to be a little more energetic while hinting at slight despair. (This is why the universal "Dating" theme is "It's raining somewhere else.")
Due to the death of Asriel on the surface, Toriel is way more emotional, and this is why she declares war on the humans, overthrowing Asgore as the king of the underground. This forces Alphys and Undyne into a predicament, in which they decide to swap roles to further develop their soul-gathering and human-capturing techniques. However, Undyne secretly starts a rebellion with other monsters once the communication between monsterkind and Toriel becomes poor. Alphys has to learn to be a leader, although she is still her UNDERTALE self, being cowardly and not actually wanting to fight any humans. Papyrus loses interest in the royal guard once Undyne takes her leave, and he hears rumors about the guard disbanding, and decides to be laid back and not focus so hard on his mission to be a royal guard. Sans, seeing this, tries to get his hopes back up and make him happier by becoming a guardsman himself, albeit not actually taking his job very seriously.
The format of all Tory Fox projects follows swapping characters for an in-universe reason. For example, "Super Mario" in Tory Fox's Universe would be "Super Wario" or something, Swapping the characters that have clear parallels (and sometimes not.) because of an in-universe reason (for the mario example, lets just say that whoever bowser is, is someone close to wario that got kidnapped instead of peach.)
This format makes it more interesting to keep your worlds the same while also bringing in new ideas for side characters or just stuff for fun.
